Last weekend we celebrated Independence Day with friends, food, and fireworks! I'm thankful for the freedom that this country affords and the privilege to celebrate yet another year. For this occasion, I took a spin on the usual pasta salad and played it up with some Israeli couscous-- and it was just as easy!

Israeli couscous summer salad; Israeli couscous, grape tomatoes, grilled zucchini, grilled onions, green onions, cilantro, extra sharp cheddar cheese, lemon juice, rosemary & oregano infused olive oil, salt, pepper.
