This week I put together a tuna casserole-- with whatever ingredients I could find around the kitchen. The search began in the cupboard where I found a few cans of cream of mushroom and tuna. A little bit of creativity, and a lot of seasoning go a long way. This definitely wasn't a healthy meal, but it still tasted fantastic!


roasted potatoes; red potatoes, zucchini, onions, oil, lemon peel, salt, pepper.



Just coat the ingredients in some olive oil, season it, and roast it in the oven for a good half hour or more until it's to your liking. Easy peasy.


tuna casserole; cream of mushroom, tuna, pasta, broccoli, onions, cheese, potato chips, salt, pepper.

By the way, I can't say enough good things about this can opener. Whoever came up with it is genius.



Just throw it all together in a big bowl and mix away. Remember to slightly under cook the pasta because it'll continue cooking in the oven.


And cut up the cheese for fun-- it kind of works like glue to bring everything together.



Crush potato chips to sprinkle on top. It gives the casserole a nice crunch and browns quite nicely in the oven. Set the oven to 425° F and bake it for half an hour or whenever it starts to bubble.



And i didn't get a picture of it out of the oven, but it tasted great for something made up of canned goods and frozen vegetables.
